  • 2 cups cooked chicken (diced)
  • 3 cups unsalted chicken stock
  • 1 cup heavy cream
  • 5 garlic cloves (minced)
  • 2/3 cup grated parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 3 cups chopped baby spinach leaves
  • 1 pint cherry tomatoes
  • Juice of 1/2 lemon
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet over medium heat, toast the dry orzo for about 2 minutes.
  3. Pour in the chicken stock and bring to a gentle boil. Reduce heat, cover, and simmer for about 10 minutes until orzo is al dente.
  4. Stir in heavy cream, minced garlic, chopped spinach, halved cherry tomatoes, Italian seasoning, salt, and pepper.
  5. Mix in cooked chicken along with half of the parmesan and mozzarella.
  6. Top with remaining cheese and squeeze fresh lemon juice over the mixture.
  7. Transfer skillet to the preheated oven and bake for 25-30 minutes until cheese is bubbly and golden.
