  • 1 lb chicken or turkey sausage (Italian-style)
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1 cup ditalini pasta
  • 1 tbsp olive oil
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, warm olive oil and add the sausage. Brown the sausage while breaking it up with a spoon.
  2. Once browned, remove the sausage from the pot and set aside.
  3. In the same pot, sauté diced onion and minced garlic until soft (about 3–4 minutes).
  4. Stir in drained tomatoes, chicken stock, basil, oregano, and return the sausage to the pot. Simmer gently for 10 minutes.
  5. Add ditalini pasta to the pot; cook until al dente (8–10 minutes).
  6. Lower the heat; stir in heavy cream and grated Parmesan until incorporated.
  7. Season with salt and pepper to taste; garnish with fresh parsley before serving hot.
