  • 6 Tbsp water
  • 5 oz coconut milk (room temperature)
  • 2 oz melted coconut oil
  • 16 oz all-purpose flour
  • 2 oz sugar
  • 1 tsp salt
  • 1 ½ tsp quick-rise yeast
  • 3 c olive oil (for frying)
  • Powdered sugar
  • Shredded coconut (or chopped nuts)
  • Jam or any other vegan filling (if desired)

Instructions

  1. Combine aquafaba, ground flaxseed, and water in a bowl; let sit for 10 minutes.
  2. In another bowl, mix warm coconut milk with sugar and yeast; allow to froth for about 5-10 minutes.
  3. Stir melted coconut oil into the yeast mixture, then add the aquafaba mixture.
  4. Whisk flour and salt in a large bowl, then gradually combine with the wet ingredients until fully mixed.
  5. Knead dough on a floured surface for 5-7 minutes until smooth.
  6. Place dough in a greased bowl, cover, and let rise in a warm spot until doubled (about 1 hour).
  7. Punch down risen dough, roll out to half an inch thick, and cut into shapes.
  8. Heat olive oil in a frying pan over medium heat; fry doughnuts until golden brown (2-3 minutes each side).
  9. Cool on a rack and sprinkle with powdered sugar or your choice of toppings.
