  • 8 oz cream cheese, softened
  • 1/3 cup white sugar
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, combine vegetable oil, sugar, eggs, pumpkin puree, and vanilla extract using an electric mixer.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ginger. Gradually add to the wet mixture until combined.
  4. For the cream cheese filling, beat softened cream cheese with white sugar and vanilla until smooth.
  5. Pour half of the pumpkin batter into the pan, spread the cream cheese filling over it, then layer the remaining batter on top.
  6. Prepare the streusel by blending brown sugar, white sugar, butter, flour, cinnamon, ginger, cloves, nutmeg, and baking powder until crumbly. Sprinkle over batter.
  7. Bake for about 45 minutes or until a toothpick comes out clean.
