  • 1 cup finely chopped walnuts
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter, melted
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 8 oz cream cheese, room temp
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. For the walnut crust, mix together chopped walnuts, almond flour, sugar, and melted butter until combined. Press into the bottom of the prepared dish.
  3. In a mixing bowl, beat cream cheese and sugar until smooth; add eggs one at a time. Reserve 1½ cups of this mixture.
  4. Fold pumpkin puree and spices into the remaining cream cheese mixture until well combined.
  5. Layer the plain cheesecake mixture over the walnut crust, followed by the pumpkin layer without mixing them.
  6. Prepare streusel by blending oats, flours, sugars, softened butter, and vanilla until crumbly; sprinkle over the top.
  7. Bake for 60-70 minutes or until set in the center. Cool before refrigerating for at least two hours before slicing.
