  • ½ cup butter
  • 4 ounces cream cheese
  • 1¾ cup almond flour
  • ¼ cup coconut flour
  • ⅓ cup sugar substitute (1:1 ratio)
  • ½ cup raspberry preserves (sugar-free)
  • 2 eggs
  • 2½ cups unsweetened flaked coconut

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8 x 8-inch baking pan with parchment paper.
  2. In a mixing bowl or food processor, combine almond flour, coconut flour, butter, cream cheese, and sugar substitute until well-mixed. Add one egg and blend until incorporated.
  3. Press the crust mixture into the bottom of the prepared baking pan and bake for 15 to 20 minutes until golden brown.
  4. In another bowl, whisk together two eggs with sugar substitute and almond extract. Stir in unsweetened flaked coconut.
  5. Once the crust is baked, spread raspberry preserves evenly over it. Then pour the coconut filling on top and spread it evenly.
  6. Bake for an additional 20 to 25 minutes until golden brown on top. Allow to cool completely before cutting into squares.
