  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 tablespoons vegetable oil
  • 1 lime
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper
  • 810 small flour tortillas
  • Sour cream
  • Sliced avocado or guacamole
  • Pico de gallo
  • Shredded cheese

Instructions

  1. Preheat your oven to 425°F (220°C) and lightly grease a large sheet pan with non-stick cooking spray.
  2. Slice the chicken and vegetables into strips. Spread the vegetables evenly on the sheet pan and place the chicken on top.
  3. In a mixing bowl, combine garlic and seasonings. Sprinkle most over the chicken while reserving some for the veggies. Drizzle oil over everything and toss to coat.
  4. Roast in the oven for 15-20 minutes until chicken reaches an internal temperature of 165°F (75°C). During the last five minutes, wrap tortillas in foil to warm.
  5. Once done, squeeze fresh lime juice over the fajitas and garnish with cilantro before serving in warm tortillas with desired toppings.
