  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 tablespoons vegetable oil
  • 1 lime
  • Fresh cilantro
  • Flour or corn tortillas
  • 1 Tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F. Lightly grease a large sheet pan.
  2. Slice chicken and vegetables into strips. Arrange vegetables on the pan and place chicken on top.
  3. In a mixing bowl, combine seasonings; sprinkle over chicken and veggies. Add minced garlic and drizzle oil over everything.
  4. Roast in the oven for 15–20 minutes until chicken reaches 165°F.
  5. Wrap tortillas in foil during the last five minutes to warm them up.
