  • 1.5 lb chicken breasts
  • 1 red bell pepper (diced)
  • 1/2 large yellow onion (diced)
  • 2 garlic cloves (chopped)
  • 1/2 cup peanut butter
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste
  • 1 tbsp lime juice
  • 2 tbsp cilantro (chopped)

Instructions

  1. Prepare the vegetables by placing diced red bell pepper, yellow onion, and chopped garlic in the bottom of the slow cooker.
  2. Layer chicken breasts on top of the vegetables.
  3. In a mixing bowl, whisk together peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
  4. Pour the sauce over the chicken in the slow cooker.
  5. Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours until chicken is tender.
  6. Before serving, stir in lime juice and chopped cilantro for freshness.
