  • 1 large salmon fillet (about lbs, skinless)
  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, olive oil, cream cheese, lemon zest, lemon juice, dill, salt, and pepper.
  3. Place the salmon fillet skin-side down on a cutting board and spread the spinach mixture evenly over it.
  4. Roll the salmon tightly from one end and secure with toothpicks or kitchen twine.
  5. Bake seam-side down on a baking sheet for about 18 minutes until fully cooked.
