  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse mini pumpkins, cut off tops, and scoop out seeds.
  3. In a skillet over medium heat, sauté diced onion and minced garlic in 3 tbsp olive oil until fragrant.
  4. In a bowl, mix ground beef with pumpkin puree, sautéed onion and garlic, spices, and herbs until well combined.
  5. Grease a casserole dish or skillet with remaining olive oil. Place mini pumpkins inside, fill with stuffing, and replace tops.
  6. Roast for 30 to 35 minutes until tender.
