  • 1/2 tsp xanthan gum
  • 1/3 cup cocoa powder
  • 3 tbsp butter, cut into 3 pieces
  • 1/2 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 3 tbsp powdered Swerve Sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/2 ounce sugar free dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, cocoa powder, powdered Swerve Sweetener, and salt. Mix thoroughly. Add melted butter and water; stir until well combined. Press into a greased 9×13-inch baking dish and bake for 10–12 minutes. Let cool.
  2. For the cheesecake layer, beat together cream cheese, powdered Swerve Sweetener, and vanilla extract until smooth. Gradually add in room temperature heavy whipping cream until fully blended. Spread over cooled crust.
  3. For the chocolate pudding layer, heat in a saucepan over medium heat: unsweetened almond milk, heavy whipping cream, powdered Swerve Sweetener, egg yolks, and xanthan gum. Whisk until thickened (about 5 minutes). Remove from heat and stir in butter pieces and vanilla extract.
  4. Pour the chocolate pudding over the cheesecake layer.
  5. Whip together chilled heavy cream, powdered Swerve Sweetener, and vanilla extract until stiff peaks form; spread over chocolate pudding.
  6. Chill for at least two hours before serving.
