  • 2 cups cooked shredded chicken
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 cup chicken broth
  • 1/4 cup Parmesan cheese (optional)
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the butternut squash, remove seeds, brush with olive oil, drizzle with honey, and sprinkle with cinnamon, salt, and pepper.
  3. Place cut-side down on a baking sheet and roast for 30–40 minutes until tender.
  4. In a skillet, heat olive oil over medium heat, sauté onion until translucent, add garlic, then mix in shredded chicken and chicken broth; cook until heated through.
  5. Add Parmesan cheese and optional ingredients to the chicken mixture; season to taste.
  6. Scoop some flesh from the roasted squash into the filling, then fill each squash half with the mixture.
  7. Return to the oven for an additional 15 minutes until golden brown.
