  • 2 cups cooked chicken, shredded
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp ground cinnamon
  • 1/2 tsp dried thyme
  • 1/4 cup chicken broth
  • Optional: Dried cranberries and chopped walnuts for added texture

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush cut sides of butternut squash with olive oil. Drizzle with honey, sprinkle with cinnamon, salt, and pepper. Place cut side down on a baking sheet and roast for 30–40 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until soft; add garlic, thyme, shredded chicken, and chicken broth. Cook until heated through.
  4. Mix in Parmesan cheese and optional cranberries or walnuts. Season to taste.
  5. Scoop some flesh from the roasted squash into the filling mixture; combine well.
  6. Stuff each squash half with the filling and return to the oven for an additional 15 minutes until golden.
