  • 2 medium sweet potatoes, cubed
  • 4 cloves garlic, minced
  • 1 cup bell pepper, chopped
  • 1/2 cup onions, chopped
  • 1 can (15 oz) chickpeas, drained
  • 1 can (14 oz) full-fat coconut milk
  • 4 tablespoons red curry paste
  • Salt and pepper to taste
  • 1 large handful spinach, chopped

Instructions

  1. In a large pot, heat oil or vegetable broth over medium heat. Add minced garlic, chopped onions, and bell pepper; sauté for about 3 minutes until softened.
  2. Stir in cubed sweet potatoes with coconut milk and red curry paste. Cook on medium heat for approximately 10 minutes until sweet potatoes are tender.
  3. Add drained chickpeas and season with salt and pepper; cook for an additional 6 minutes.
  4. Just before serving, stir in chopped spinach until wilted.
