  • 3 cups + 1 heaping tablespoon gluten-free baking flour blend
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup cold butter or vegan butter (cubed)
  • 1 pint blueberries
  • 6 oz raspberries
  • 6 oz blackberries
  • 1 large egg
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a 9×13” baking pan with nonstick spray.
  2. In a medium bowl, combine berries with 1/2 cup granulated sugar and a heaping tablespoon of flour; set aside.
  3. In a large mixing bowl, whisk together remaining flour, sugars, baking powder, cinnamon, and salt. Mix in egg and vanilla, then add cubed butter. Blend until crumbly.
  4. Press more than half of the crumb mixture into the bottom of the pan for the crust. Spread berry mixture evenly on top and sprinkle remaining crumbs over berries.
  5. Bake for 38-40 minutes until golden brown. Allow cooling completely before cutting into squares.
