  • 3/4 cup brown rice flour
  • 3/4 cup unsweetened almond milk
  • 1/2 cup Frank's Buffalo Sauce
  • 1 package soft tofu
  • Fresh vegetables (kale, cucumber, carrot, avocado)
  • Large tortillas

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix brown rice flour, almond milk, and black pepper in a bowl; let sit for 5 minutes.
  3. Coat cauliflower florets in the batter and arrange on a parchment-lined baking sheet.
  4. Roast for 20-25 minutes until slightly browned.
  5. Toss roasted cauliflower in buffalo sauce and roast again for another 15-20 minutes.
  6. Blend tofu and dressing ingredients until smooth; fold in chopped parsley.
  7. Assemble wraps with veggies and buffalo cauliflower; drizzle with ranch.
