  • 68 lasagna noodles (regular or gluten-free)
  • 1 1/2 cups marinara sauce
  • 1 2/3 cups hummus
  • 3.5 oz fresh spinach
  • 1 small can sliced mushrooms
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 1/2 tbsp oil
  • 1/2 tbsp soy sauce (gluten-free if needed)
  • 1/2 tsp cumin (optional)
  • 1/2 tsp paprika (optional)
  • A few tbsp lemon juice (optional)
  • Salt and black pepper to taste
  • 7 oz vegan cheese

Instructions

  1. Cook lasagna noodles according to package directions until al dente.
  2. Preheat your oven to 360°F (180°C) and spread about 1/2 cup marinara sauce on the bottom of a baking dish.
  3. In a frying pan, heat oil over medium heat. Sauté onion, garlic, and mushrooms for about 4 minutes. Add soy sauce and spinach; cook for another minute.
  4. Mix sautéed veggies with hummus and season with optional spices to taste.
  5. Lay cooked noodles flat, fill each with the hummus mixture, and roll them up tightly. Place seam-side down in the baking dish.
  6. Cover rolled noodles with remaining marinara sauce and vegan cheese. Bake for 20-25 minutes until heated through.
